Ingredients:
Filling:
2 tbsp. extra-virgin olive oil
½ cups of diced red onion
½ cups of diced red bell pepper
½ cups of diced fresh mushrooms
½ cups of chopped fresh spinach
1 tsp. minced garlic
½ tsp. dried Italian seasoning
salt and ground black pepper to taste
½ cups of crumbled feta cheese
Chicken:
4 boneless, skinless chicken breasts
4 slices prosciutto
1 large egg, beaten
¾ cups of grated Parmesan cheese
¾ cups of fine dry bread crumbs
1 tsp. dried parsley
salt and ground black pepper to taste

Directions:

  1. Creating the filling In a small skillet over medium heat, warm the oil. Add the onion and stir-fry for three minutes, or until soft. Add bell pepper and mushrooms; cook for about 3 minutes, stirring occasionally, until softened.
  2. Sliced spinach and minced garlic are added after the heat source has been turned off. Stirring continues until the spinach begins to wilt. Add salt, pepper, and Italian seasoning to the dish. Allow 10 minutes for
    cooling. Add the feta cheese, breaking up any big chunks as you go.
  3. preparing the chicken: Place chicken on a cutting board after patting it dry. Insert a knife into the thickest part of each breast and slice parallel to the cutting board, leaving about an inch at each tip. This creates a pocket in each breast. Take care not to completely sever the breast’s thinnest edge.
  4. 370 degrees Fahrenheit (190 degrees Celsius) is the recommended preheating temperature for air fryers, if one is needed.
  5. Slices of prosciutto should be separated and placed on a clean surface. Each slice of prosciutto should have 2 tbsp. of filling. Roll the prosciutto around the filling to form an oblong bundle. Each sliced chicken breast should have one bundle tucked inside of it. Use toothpicks to secure the opening.
  6. In a small bowl, add the beaten egg. In a different shallow bowl, mix the Parmesan cheese, bread crumbs, parsley, salt, and pepper. Each stuffed chicken breast is first dipped in beaten egg, followed by a bread crumbs mixture. Place into the air fryer basket after spraying with cooking spray on both sides.
  7. Fry until browned in the air fryer that has been preheated, about 15 minutes per side. In the center, an instant-read thermometer should register at least 165 degrees Fahrenheit (74 degrees C)
